I am REALLLLLLLY picky about my cookbooks. I mean... seriously. It seems like the cookbooks that have great recipes are really nutritionally bad for me and then the healthy cookbooks have recipes that either taste like cardboard or have ingredients that I'd have to travel to a foreign country to find! Rarely do I find a cookbook that has delicious recipes that are also healthy and cheap to make.

The Happy Herbivore!
Okay, don't freak out on me because it says Vegan on the cover. Seriously. I almost put the cookbook down when I saw this but decided to gamble on it... and I am SO glad I did!
You would seriously have no idea that these recipes are vegan OR low-fat judging by their taste.
The recipes are:
1. Awesome.
2. Absolutely delicious.
3. Cheap to make.
4. Use easy-to-find ingredients that you probably already have at home.
5. Great for super-tasty leftovers (I'm a leftovers lover).
This is my new staple cookbook! My favorite recipe so far has been the Smoky Black Bean Enchiladas... oh baby. SO so good. And my dad, who refuses to eat tofu in any shape or form, gobbled these down without hesitation!
Lindsey Nixon is the author, and this girl is awesome. She knows her foods! What's really cool is that she started Happy Herbivore recipes in her TINY kitchen in her New York apartment, so these recipes are even friendly for those of you with itty-bitty kitchens.
